I like bagels, but they confound me. How do they have a chewy center, but a hard carapace on the outside?
I went to a drum circle last night. There were a lot of hippies there.
Bagels achieve their hard carapace by being dunked in boiling water for half a minute before being baked. Which does different things to the flour on the outside of the bagel because… chemistry. I think.
